How often do you forget your passwords? I feel like I have the embarrassing record in how often it happens to me. So the early fall Apple pie is coming now, right before Christmas. HEY, still counts!


  • 1 glass of flour
  • 1/2 cup butter (cold!!)
  • 1 egg
  • 1 tablespoon sugar
  • pinch of salt
  • 4 big apples
  • cinnamon
  • ginger
  • brown sugar
  • lemon juice

Add flour, sugar, salt and egg to the bowl. Cut the butter into smaller pieces. Make the dough (don’t kneed it for too long so your warm hands don’t make the butter melt too much), cover the bowl and put it back to the fridge for around half an hour.

Cut the apples into thin slices or grate them, then place them in the colander, pour some lemon juice over them so they don’t get dark and let the juice go. Preheat the oven to 360.
Take 2/3 of the dough out of the fridge and fill the pan bottom evenly. Use a fork to make a bunch of small holes in the bottom and put the dough in the oven.

after 15 minutes take the base of the oven. Mix apples with some cinnamon, ginger and brown sugar, then spread them evenly over the base.

Take the rest of the dough and use a greater to shred it over the apples. Try to do it quickly so it doesn’t get warm.

Put the cake back in the oven and bake for another 20-30minutes. When the top looks baked take the cake out.
Serve warm, with a scoop of vanilla ice cream on the side.
