pierogi ruskie – say what?

Pierogi. Just a classic dish. Comfort food. Lunch. Dinner. Just.. oh so good. And pierogi ruskie so potato and cheese ones are just my favorite. It’s one of those things that you will always love, always remember and always crave. That’s just a fact.


  • 3/4 pound Farmer’s cheese (POLISH VERSION if possible. If not, get the US one and let it dry for a while)
  • 3 medium size potatoes
  • 2 onions
  • 2 pounds of flour
  • 1 tbsp salt
  • 3 1/3 oz oil
  • 1 1/2 cup of warm water
  • salt and pepper

Cook potatoes in salty water. Cool them down and mash them. Cut onions into small pieces and fry them until they have a nice golden color (I personally prefer a little more fried but not everyone likes it my way:) )

To make the filling mix 3/4 of onions, mashed potatoes and cheese together, add salt and pepper.

In the meantime pour oil and warm water into flour, add a pinch of salt and slowly mix into smooth dough. When done use the rolling pin and make the dough around 0.1-0.2 inches thin.

I recommend using a wider glass (whisky glass for example) or cutting the dough into 3.5×3.5 inches squares. Add filling inside, and stick the sides of dough together. You can use water if you want it to glue together better.

Cover pierogi with kitchen cloth so they don’t dry too much. When all done boil the water and add some salt. Slowly put pierogi into the water. It will probably need around 5-8 minutes depending on the heat. The easiest way to know they are ready is when they just float to the top of the pot.

Use the rest of the fried onion and put it on top with some of the oil you used for frying.

This batch makes a decent portion so I usually freeze half and when I have cravings just take them out and cook.

lazy Strawberry cake

Yo Yo Yo!

Summer is almost there! It was so nice and warm (and even hot some days) lately, that there was only a few desserts I want to eat. And since it’s strawberry season, I went all the way into this!

It the cake that is 1. easy 2. relatively fast 3. everyone likes 4. just yummy. It also has a few ingredients only and you can use any fruits you want (hey there plums, waiting for you and September). |So without further delay, I present to you STRAWBERRY CAKE!


  • 2 1/4 cup flour
  • 1/2 cup milk (warm)
  • 3/4 oz active yeast
  • 3 eggs
  • 4 oz rapeseed oil (or any oil you like)
  • 1/2 cup sugar
  • pinch of salt
  • 2-3 cups of strawberries

Take 3 spoons of warm milk and a spoon of sugar and mix it with active yeast and leave it in a warm spot to grow. In the meantime add all ingredients but strawberries to the big bowl. When the yeast grows add it to the bowl and mix all together. Set it aside in a warm spot for around an hour, and cover with kitchen towel so it is ever more warm.

Wash the strawberries. If they are big cut into smaller pieces and left them in colander to dry a little.

Move the dough to the pan (I used square 9″ pan), and put strawberries on top. Set aside for another 15 minutes in a warm spot and let the dough grow a little bit more. Preheat an oven to 380 degrees.

In the meantime you can prepare the top cover „crumbs”, which is not an obligatory part of the cake 🙂 But if you want it, cut around 1-2 oz of cold (!) butter into small pieces, mix it with sugar and flour, and put it on top of strawberries right before moving the cake to the oven.

Bake the cake for around 35 minutes. Let it cool for a few minutes and let yourself eat it all at once 🙂

Rolls are rolling

There is a way to impress your significant other/in-laws/friends/potential home buyers/neighborhood kids/their parents and it is to make rolls. That smell amazing. That are super simple food. That make you look cool. Or whatever you want to put there.

Also admit, how many people around you make their own bread or rolls? It’s just cool thing to say.

SO without farther delay, here it is!


  • 3 1/2 cup flour
  • 1 cup milk (warm, but not too warm)
  • 3/4 oz active yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 egg
  • *grains (optional, to put on the rolls)

Separate around 1/4 cup of warm milk, add sugar and yeast. Mix it and put in the warm spot for the yeast to grow. In the meantime put flour and salt in separate bowl. When yeast grows, add this, and the rest of warm milk to dry ingredients. Mix the dough until you have a nice, solid ball.

Leave the dough in a warm spot for around an hour. You can cover it with kitchen cloth so it’s warmer. Take the dough from the bowl and form small balls that will be your rolls. Put them on the pan you will be using for baking and remember to leave around 2 inches between each. Then set aside in a warm spot again for another 30 minutes.

While waiting break the egg and stir it. Put it on top of the rolls and add some grains, sesame or poppy seeds if you want. Preheat the oven to 400 F.

Bake the rolls around 20 minutes or until the start getting nice brown color on top.

You can eat them right from the oven. Seriously, just add butter and they are awesome. And your house smells awesome. And everyone around is more than happy. Also warning – they disappear in 10 minutes. This portion makes around 10 and they were gone super fast.

You will love it! I swear!



The easiest brownie

Here’s the thing – brownies are awesome. Majority of people (and everyone I know) loves them. This one is my go to, if I need quick snack, when I have unexpected quests or if someone around needs dessert like ASAP.

Btw, it won’t take 5 minutes to have it ready but 5 minutes is all you need to make the whole apartment smell like chocolate. Usually helps 🙂

Ingredients (square 9×9 inches pan)

  • 3/4 cup brown sugar
  • 1 spoon of honey
  • 1/2 cup butter
  • 3 small eggs
  • 1/3 cup cocoa powder (ideally unsweetened)
  • 1/3 cup of chocolate chips
  • 1/2 cup flous
  • 1/2 teaspoon baking powder
  • pinch of salt

So there are two ways to make the brownie. You can make it more like a chocolate block, or more „light” one. I personally prefer the 2nd option but feel free to make if the way you like it more.

If you want lighter, „fluffier” brownie, start with separating egg whites and yolks. Use a mixer to make an egg whites foam then add sugar and mix it to be smooth. Then add egg yolks and continue mixing

If you want your brownie to be more compact skip the foam part and mix it all together.

Melt the butter (I recommend putting the bowl with butter in a pot with warm water, but you can also use a saucepan), add to eggs and sugar mix and stir together. Slowly add cocoa, flour, baking powder and salt while stirring.

Put a little bit of oil or batter on the pan. In the meantime preheat oven to 370 degrees F. Add chocolate chips to the mix and lightly stir with a spoon. Move the chocolate mix into the pan.

Bake for 30 minutes. When done, check with the toothpick if the cake is dry inside. You want the cake baked but not super dry, so it’s good if you see some grease on the toothpick.

You can melt a few chocolate chips and put it on top, but I personally prefer the plain one. There’s enough chocolate inside 🙂

Cut into squares, serve while still warm.

when life gives you avocado-make chocolate

What is my most favorite thing on Earth (after pizza)? CHOCOLATE. And there is a reason why chocolate has Ola in its name. Get it? ChocOLAte. Accident? I don’t think so…

There is nothing that can fit perfectly any time of the day, for any occasion or any mood. Everyone can have the one they prefer, and everyone will be happy with so many options – there’s milk chocolate, dark, bitter, white, hazelnuts, with fruits, plain one. Homemade and the one you buy in the store.

I like my chocolate. I like snacks in general. Sugar is what keeps me going. But it’s all about being healthy and fit now. And so many things I like don’t fit into that. So, what needs to be done, is a compromise. Now, I present you another example of compromise – Chocolate pudding made from nothing else but avocado (hey, apparently I’m a Millennial too!).

Check it out and be amazed by it’s smoothness and chocolate-ness .

Chocolate avocado pudding

Ingredients (One portion)

  • 1 medium size avocado
  • 4 tablespoons of dark cocoa (more if you want it to be more bitter)
  • 4 oz almond milk (or any other milk if you don’t like almond milk)
  • 1/4 teaspoon of cinnamon
  • 4-5 soft dates
  • pinch of sea salt
  • coconut flakes for decoration

If you are using dried dates put them in a little bit of hot water so they get soft. Peel avocado. Add all the other ingredients and blend them together until it’s all smooth.

Decorate with coconut flakes, goji berries, raspberries, almonds or anything that is your favorite addition. Eat guilty-free even while on diet.

Simple like that!



In love with homemade Chocolate


The snow outside makes me feel like it’s December, no almost mid-March. Why winter, why?!

Also, the weather makes the cravings even worse, there’s not enough snacks in the apartment to make me happy. So, looking for the easiest solution to make my brain think I consumed 2514072491 kcal in sweets, I made those – HOMEMADE CHOCOLATES.

What I won’t tell myself:

  1. It’s healthy
  2. It’s homemade so just the „good things”
  3. I can eat tons and it’s still better than chocolate from the store

What I will tell myself:

  1. Chocolate
  2. Chocolate with cranberry
  3. Chocolate with cranberry and almonds
  4. Just the right amount of sweetness

Homemade chocolate


  • 1 cup of coconut oil (unrefined)
  • 2 1/3 cup of dark cocoa
  • 5-7 tablespoons of honey (depending how sweet you want it to be)
  • dried fruits, almonds, nuts, raspberries, coconut shrims, orange zest etc.
  • optional 1 teaspoon of brown sugar if you want it to be more sweet/fudgy-like

Melt the coconut oil over hot water. I usually put a metal or ceramic bowl over the pot with hot water so it slowly melts with the heat from water, and when the water gets cooler I heat it up over over low heat (turn the heat when you see water starting to boil!).

When it’s liquid enough, add honey, and mix until it melts into the oil. Important – the honey shouldn’t fully melt.

Slowly add cocoa to the oil-honey liquid while still slowly mixing, until blended. When all is well blended you may try a little (be careful though, HOT!) to check if you are ok with the level of sweetness.

Pour mixture into chocolate mold, or a small cookie sheet (in that case use baking paper).

Put anything you like on top of your chocolate. My personal favorite is cranberry (cause it gives it more sweetness without adding sugar or more honey), Goji berries and almonds, or just candied orange zest, but you can add whatever makes you happy!

Let it cool down, and move to the fridge to chill for 1.5-2h.

EAT IT ALL, but first take a pic and send it to your friends to invite them over. Everything tastes better when shared with friends.

Et voila! Simple, effective, makes your belly (and your brain) happy.
